Main Ingredients:
1 fish fillet, 30g fermented black beans.
Additional Ingredients:
2 slices of ginger, 1 small section of scallion, 1.25ml cooking wine, 1ml salt, 30ml corn oil, 1 scallion, 4 small dried chili peppers, 5ml oyster sauce, 2ml soy sauce.

Steps for Cooking Fish Fillet with Fermented Black Bean Sauce
Prepare the main ingredients: fish fillet, fermented black beans, scallion, dried chili peppers, ginger, and scallion;
Wash the fish fillet, pat dry, sprinkle with salt and cooking wine, and mix well. Marinate for 10 minutes;
Chop the ginger and scallion; cut the dried chili peppers and scallion into small circles; chop the fermented black beans;
Heat the wok, add some corn oil, and stir-fry the fermented black beans over low heat until fragrant;
Add the chopped ginger and scallion and stir-fry until fragrant;
Add some oyster sauce and soy sauce and stir-fry quickly. Turn off the heat;
Scoop out the fermented black bean sauce;
Pat dry the marinated fish fillet with kitchen paper and place it in a steaming bowl;
Pour the fermented black bean sauce on top of the fish fillet. When the water in the steamer boils, place the steaming bowl in the steamer and steam over high heat for 7 minutes;
Take out the steamed fish fillet and sprinkle with scallions and dried chili peppers while it’s still hot.
