27’s Cooking Diary – Winter Solstice Hot Pot (Plus Crispy Pork and Meatballs Recipe) Detailed Steps
Prepare the ingredients: Medicinal herbs: sliced codonopsis root, sliced red ginseng, sliced codonopsis pilosula, sliced astragalus root, sliced Chinese angelica, red dates, coix seed, lotus seeds, goji berries. Meatballs: ground pork, egg white, soybean powder, a little salt. Main dishes: pig’s trotters, free-range chicken meat, pork belly. Crispy pork: pork belly, egg white, appropriate amount of soybean powder.
Soak all the medicinal herbs in water and set aside.
Pre-cook the pig’s trotters first. This will make the skin more fragrant when cooked in the hot pot. Then blanch them in boiling water. Put the pig’s trotters in the pot and stew them for about 1 hour.
After stewing the pig’s trotters for a while, add all the soaked medicinal herbs and continue to stew for about another hour.
