27’s Lab – Banana Soft Cookies Cooking Steps
Mash the bananas into a puree. Boil the banana puree over medium heat, stirring constantly. Once boiled, reduce heat and simmer for a moment to thicken into a sauce, turning brown. Let it cool for later use.
Cut the butter into small pieces, soften it, then add sugar and beat with an electric mixer for 1 minute.
Add egg yolk and continue beating for 30 seconds.
Add the cooled banana sauce, mix well until fluffy. Pour in rum without stirring.
Sift the low-gluten flour and baking soda together, then fold into the butter mixture.
Gently fold until well combined.
Knead the dough, chill in the refrigerator until firm and not sticky. Shape the dough as desired, then freeze until firm.
Remove the dough and cut into even pieces.
Place in a preheated oven, top and bottom heat, at 150°C for 10-12 minutes.
Bake until golden brown, adjusting oven temperature as needed!
