Beat egg whites with 80g granulated sugar in three batches until wet and dry foam is formed. Preheat the oven to 150 degrees Celsius. Place a pan of water on the baking sheet and place it on the bottom of the oven for a water bath.
Put 5 egg yolks and 1 whole egg in a mixing bowl, add 80g milk in three batches, and mix well with an egg beater.
Melt the butter in a double boiler, then add it to the egg yolk mixture, add 1g salt, and mix well.
Sift in cake flour and mix well with an egg beater at low speed until no lumps remain.
Cut and fold the egg white foam into the egg yolk mixture to make the cake batter.
Line the bottom of an 8-inch mold with a round oil-absorbing paper (if not available, skip this step), brush a thin layer of oil on it, and pour in the cake batter, shaking out large air bubbles.
