Wash the chicken, drain, and marinate with all seasonings for at least 1 hour. (I marinated overnight, so I didn’t take photos)
Crush the curry leaves and add them to the marinated chicken.
Spread the crushed curry leaves evenly on the chicken, for about 20 minutes.
Remove the crushed curry leaves afterward (I just wanted the chicken to have the flavor of the leaves).
Mix egg yolk powder with chicken bouillon powder, add water to make a paste.
Stir the batter until smooth.
Dip the chicken into the batter, coat the chicken thoroughly with the batter, ensuring every corner is covered for a complete coating when frying.
Heat oil in a wok, when the oil is about 70-80% hot, fry the chicken until golden brown or cooked through.
