Detailed Steps for Cooking A Jiao Cake
Tongrentang A Jiao.
Crush the A Jiao and pour it into the yellow wine to dissolve.
Seal with plastic wrap and let it sit for one day.
After soaking for one day, the A Jiao softens into a jelly-like texture and can be poured into a pot. Cook over low heat and stir constantly with a wooden spatula until the A Jiao is completely melted. Add rock sugar to melt it and the A Jiao will become sticky.
Pour in dried longan meat, red dates, goji berries, walnuts, and sesame seeds, and stir while pouring until mixed evenly. Turn off the heat and continue stirring for 15 seconds.
Wrap it in oil-absorbing paper, put it in a small tray to shape it, press it flat with your hands, put it in the refrigerator to cool for a few hours, and then take it out and slice it.
First cut it into strips, then cut it into pieces and serve.
