Detailed Steps for Cooking Scallion Flavored Taro
Peel and wash the taro.
Finely chop the scallions.
Cut the taro into chunks.
Steam the cut taro chunks in a steamer for five minutes until cooked.
Remove and let the steamed taro cool.
When cool enough to handle, coat evenly with starch.
Heat oil in a pan and fry the taro chunks.
Remove when golden brown and drain excess oil.
Leave a little oil in the pan, add sweet bean sauce, sugar, ketchup, oyster sauce, and a little hot water. Stir until thickened.
Add the taro and stir-fry evenly with the sauce, then sprinkle with chopped scallions.
