Steps to Cook Bamboo Fungus Shiitake Chicken Soup
1. Let’s start with a group photo. Cut the chicken into pieces, add a few slices of old ginger, rinse the bamboo fungus, soak the dried lily flowers, make a cross incision on the shiitake mushrooms, wash the red dates and goji berries, and set aside.
2. Boil a pot of water first and set aside.
3. Add a small amount of oil, stir-fry the chicken pieces in the pot (if the chicken is fatty enough, you can skip the oil).
4. Transfer the stir-fried chicken pieces to the pot of boiling water, bring to a boil over high heat, then simmer over low heat for two hours.
5. Add shiitake mushrooms, red dates, and dried lily flowers, simmer over low heat for another two hours.
6. Twenty minutes before serving, add bamboo fungus, goji berries, and season with salt. Note: Bamboo fungus can become very sticky if stewed for too long, so twenty minutes should be enough.
