Steps for Cooking Banana Muffin Cake (Air Fryer Version)
Peel and mash the ripe banana.
Add sugar, milk, corn oil, and egg to the mashed banana and mix well.
Sift low-gluten flour and baking powder into the banana mixture.
Use a scraper or egg beater to mix until there is no dry flour left. Be careful not to overmix in one direction to avoid gluten formation. Preheat the air fryer to 180 degrees Celsius.
Pour the batter into a heat-resistant glass cake cup and place it in the preheated air fryer. This recipe makes 4 cakes.
Adjust the air fryer to 170 degrees Celsius and bake for 10 minutes. Open the lid and check the color of the cake. If it has turned brown, cover it with aluminum foil to prevent over-browning.
After covering with aluminum foil, adjust the temperature to 180 degrees Celsius and bake for another 15 minutes.
To check if the cake is cooked, insert a toothpick into the center. If it comes out clean, the cake is ready to be taken out of the air fryer.
