Chop the scallions, cut the dried chili pepper into sections, and shred the carrot.
Seasoning Sauce: Mix 2 tbsp seafood soy sauce, 1 tbsp oyster sauce, 1 tbsp satay sauce, and 1 tbsp Thai sweet chili sauce with chicken powder.
Boil water in a pot, add a little white pepper powder and salt, put in the meatballs and cook until soft, then remove and set aside a small bowl of soup.
Blanch the bean sprouts in the remaining soup, remove when they are still crunchy, and rinse with cold water.
Heat oil in a pan, add chopped scallions, dried chili pepper sections, and shredded carrot, and stir-fry until fragrant.
Add the meatballs and stir-fry for a while, then add the seasoning sauce and soup, and simmer the meatballs over low heat until they are fully flavored.
Add the bean sprouts, turn up the heat and stir-fry quickly, then reduce the sauce.
