Detailed Steps for Cooking Beef and Lettuce Congee
Slice the beef, place it in a container, add 1/4 teaspoon of baking soda, 2 tablespoons of light soy sauce, 1/3 teaspoon of ground pepper, mix well. Add 1 tablespoon of water, mix, then add another tablespoon of water, mix until water is absorbed. Add 1/2 teaspoon of cornstarch, mix well, add 1 teaspoon of cooking oil, mix again. Cover the container and refrigerate overnight. When ready to cook, shred the lettuce, chop the spring onion, shred the ginger, and cook the white congee;
Serve 1 bowl of white congee in a bowl, bring to a boil;
Add ginger shreds and marinated beef into the congee pot, disperse with a spoon, cook until beef is 70-80% done;
Add lettuce shreds, sprinkle with a pinch of salt, add half of the chopped spring onion, sprinkle with a pinch of salt, stir briefly and remove from heat. When serving the congee in a bowl, sprinkle with 1/3 teaspoon of ground pepper, 1/2 teaspoon of sesame oil, and the remaining spring onion. Stir a few times and it’s ready to enjoy.
