Detailed Steps for Making Beef Noodle Soup
Mix flour, salt, and water to form a smooth dough. The ratio of water to flour for kneading is: 300g flour, 145g water, 3g salt.
Divide into small dough portions, with smaller ones for the elderly and children to eat, resulting in thinner noodles.
Roll out the dough into sheets, press a line in the middle with chopsticks, and brush the surface with oil. Cover with plastic wrap and let it rest for two hours.
Use beef brisket and beef bones with meat.
After washing the beef brisket and beef bones, blanch in cold water, skim off any foam, and remove from the pot.
In a clay pot, add hot water, blanched bones, and a pack of cooking meat seasoning. Bring to a boil over high heat, then simmer over low heat for an hour.
Add the blanched beef brisket and continue simmering over low heat for another hour.
Set aside the cooked beef and broth.
Take some meat and broth, season with salt and pepper, and cook for a few minutes to let the meat absorb the flavors.
