Prepare the ingredients.
Boil water, add ginger slices and cooking wine, then add pig’s trotters and blanch.
Blanch twice in water to effectively remove blood. After removing, quickly rinse the pig’s trotters under cold water for a moment to make them more elastic.
Heat vegetable oil and stir-fry ginger slices until fragrant.
When the oil is hot, fry the pig’s trotters until they turn golden brown.
