Cooking Steps for Beer-Braised Pig’s Trotters
Wash the pig’s trotter and chop it open.
In a pot, add ginger slices and cooking wine, bring to a boil, then blanch the pig’s trotter for about 10 minutes and remove.
Quickly rinse the pig’s trotter in cold water to wash for a moment, making the trotter more elastic.
Once the trotter has cooled, fry it in hot oil until golden brown.
When the color slightly changes, reduce to medium-low heat, add rock sugar and stir-fry until caramelized, then add ginger slices, spring onion segments, and star anise to stir-fry until fragrant.
Add a small amount of water and bring to a boil again.
Then add beer until the ingredients are just submerged.
Stir in 2 tbsp of soy sauce and 2 tbsp of dark soy sauce, bring the broth to a boil.
Reduce to low heat in a clay pot, add spring onion knots, and simmer for 1-1.5 hours.
Once the trotter is tender, uncover, increase the heat to reduce the sauce.
Cook until the sauce thickens, then sprinkle with chopped spring onions and it’s ready to serve.
