Detailed Steps for Cooking Beer-Braised Pig’s Trotters
Heat the pot, add pig’s trotters, cooking wine, ginger slices, and spring onion knots, bring to a boil over high heat, then simmer over low heat for three minutes, remove and rinse clean.
Add half a bowl of water, simmer with rock sugar until the soup turns color.
Simmer over low heat until the rock sugar completely dissolves.
Pour in the rock sugar, stir-fry quickly.
Pour in a whole bottle of beer, add some water if needed until the pig’s trotters are submerged.
Add dried chili, bay leaves, cinnamon sticks, star anise, and other spices.
Bring to a boil, then transfer to a rice cooker or pressure cooker to cook until tender.
If the water is not enough, add some boiling water halfway through.
Poke with a chopstick, if it easily goes through, it’s almost done.
Transfer back to the pot, remove the spices and dried chili.
Add a little salt, chicken bouillon, dark soy sauce, light soy sauce, cook over high heat to reduce the sauce.
Plate and garnish with chopped spring onions.
