Detailed Steps for Cooking Beijing Snack: Pea Jelly
Ingredients: Peeled old peas, agar, granulated sugar, water, alkali noodles.
Soak the peas in water for half an hour.
Soak the agar in cold water until it becomes soft and transparent.
Cook the peas in a pot with appropriate amount of water over high heat.
After boiling for 20 minutes, add a little alkali noodles and stir well, then continue to cook.
When the peas become a paste, add granulated sugar and stir well while it’s still hot.
Sift the paste to remove impurities.
Put the sifted paste in a pot, add the soaked agar, and stir-fry the paste over low heat until it becomes dry and does not stick together immediately when pushed apart.
Brush a little honey on the bottom of the mold.
Pour the paste into the mold and let it cool, then cover it with oiled paper (to prevent the pea paste from forming a crust and cracking, and to keep it clean and shiny).
After cooling for an hour, turn the pea jelly over onto a sterilized cutting board.
Cut the pea jelly into pieces, arrange them on a plate, and garnish with Beijing cake before serving.
