Steps for Cooking Black Chicken Walnut and Chinese Yam Porridge
Cut ginger into slices, chop scallions, peel and wash Chinese yam and cut into thick slices, wash goji berries and walnuts; put black chicken into boiling water and add rice wine and ginger slices, then rinse with cold water and set aside.
Put the chicken, ginger, dried tangerine peel, walnuts and rice into a pot with boiling water, and add some salt.
Add the washed Chinese yam after half an hour. As Chinese yam is easy to cook, it is usually used in soups with noodles.
Bring to a boil over high heat and simmer over low heat for one hour.
Sprinkle with chopped scallions. If you prefer a stronger flavor, add some black pepper, a drop of sesame oil or a little chicken essence. I don’t eat these, so I didn’t add them.
