Steps for cooking Black Pepper Chicken Steak
2 chicken thighs.
Remove the bones and skin if you don’t like them.
Use the back of a knife to tenderize the chicken thighs on both sides, which makes them easier to marinate.
Add dark soy sauce, cooking wine, black pepper, salt, sugar to the chicken thighs.
Add chopped onions and mix well.
Marinate in the refrigerator overnight (at least 2 hours). I usually do these two steps the night before.
Without adding oil (the chicken thighs will release oil themselves), fry the chicken thighs over low heat, constantly turning and cutting them until they change color. Be patient, or you can use a spatula to press the chicken thighs to cook them faster. When the chicken steak is cooked, remove it from the pan.
Then add chopped onions, scallions, and broth to the pan to make a sauce.
Pour the sauce over the chicken steak.
