Wash the fresh beef brisket
Cut into cubes and blanch in cold water
Remove when foam rises to the surface
Rinse the meat to remove any remaining foam, drain and set aside
Prepare the spices for cooking the meat: 1 piece of Amomum, 1 piece of Fructus Amomi, 4 pieces of Amomum tsao-ko, 5 cloves, around 30 grains of Sichuan peppercorns, 2 slices of Angelica dahurica, 2 grams of Fennel seeds, 4 leaves of Bay leaves, and a piece of Ginger. Also prepare 3 fresh hawthorns
