The recipe calls for dark soy sauce and five-spice powder, but I don’t have them, so I’ll just use these ingredients. Divide the scallions and ginger into two portions.

I made this dish before, but the chicken wings weren’t very flavorful, so this time I marinated them. Cut two slits on each chicken wing, add an appropriate amount of scallions, ginger, one star anise, a little cooking wine, and a little soy sauce. Mix well and let it sit for 15 minutes. Use this time to prepare other ingredients.

Cut the potatoes and soak them in cold water (I used to see my mom do this when she cooked, I don’t know why, but I’ll just do it). The chicken wings are marinated, so it’s time to start cooking.

Boil a pot of water, add the chicken wings and the marinade, and blanch them for a moment. This step is called “flying water”. Turn off the heat after the water boils, take out the chicken wings, drain them, and set them aside. Discard the other ingredients except for the star anise (I just removed it and will use it later). You can start the next step while boiling the water, it won’t affect the cooking process.

Heat a wok with a little oil and stir-fry the potatoes. If you do this step first, turn off the heat and wait for the chicken wings. If the chicken wings are ready, you can add them directly.

Add some water, bring to a boil, then reduce the heat and cover the wok. Braise the dish, stirring occasionally.
