Braised Chicken Detailed Steps
Prepare the ingredients, cut the green and red peppers into pieces, slice the shiitake mushrooms, wash and chop the chicken thighs into pieces about 5 cm in size, cut the scallions and ginger into slices, and take a small handful of rock sugar.
Put a small amount of oil in the pot, heat the casserole over low heat, add the rock sugar, and if there is no casserole, a frying pan can also be used.
Use a wooden spatula to stir in circles until the rock sugar is completely melted and small bubbles appear.
Turn up the heat, add the chicken pieces and stir-fry until all the chicken pieces are colored.
Add scallions, ginger, 2 tablespoons of cooking wine, 1 tablespoon of dark soy sauce, and 1 tablespoon of light soy sauce, and stir-fry evenly.
Add hot water to cover the chicken pieces. Be sure to add hot water. If cold water is added, the chicken pieces will not be tender.
When the water in the pot boils, add shiitake mushrooms and a small spoon of salt, stir well, cover the pot, and simmer for about 15 minutes.
When the soup in the pot is about to dry, add green and red pepper pieces, stir-fry until cooked, turn up the heat to thicken the sauce, and serve.
