Detailed Steps for Braised Chicken
Prepare the ingredients shown in the picture.

Cut the lettuce into slices and place it at the bottom of a clay pot.
Wash the shiitake mushrooms and soak them in hot water. Do not pour out the water used to soak the mushrooms.
Cut the shiitake mushrooms into strips.
Boil water in a pot, add two slices of ginger and 2 tablespoons of cooking wine to the chicken, and cook until boiling.
Remove the chicken from the pot and rinse it with cold water. Set aside.
Add oil to the pot, add rock sugar, and heat until the sugar melts.
Add the chicken and stir-fry until the sugar turns brown.
Add the shiitake mushrooms, cooking wine, oyster sauce, light soy sauce, dark soy sauce, and salt to the pot. Stir-fry evenly.
Add the water used to soak the shiitake mushrooms to the pot and braise for 10 minutes.
After braising, add the green and red bell peppers and stir-fry evenly.
Put the chicken in the clay pot with the lettuce (this step can be skipped, and the dish can be served after adding the bell peppers and thickening the sauce with cornstarch. However, if you are eating alone and don’t want to cook vegetables separately, you can cook everything in one pot).
Braise for 3 minutes and thicken the sauce with cornstarch.
