Half a duck; 2 bamboo shoots.

1 onion; scallions as needed; 1 tablespoon of seasoning; salt as needed; 3 slices of ginger.

Steps for Cooking Braised Duck with Bamboo Shoots
First, take one or two bamboo shoots, rinse off the surface dust, soak them in clean water, and drain them. Soak them longer if they are salty, and only soak them until they are open if they are not.
Next, take half a duck and clean it, chop it into small pieces that are easy to pick up, and put it in a pot with cold water. Blanch it over low heat to remove the blood, then wash it clean and put it back in the pot with enough water. Add the chopped onion and ginger slices, and bring to a boil over high heat.
After the pot boils, skim off the foam, cover it, and simmer the duck for about 20 minutes over medium-low heat. Then, add the soaked bamboo shoots.
Bring it to a boil again over high heat, then reduce the heat to low, cover it, and simmer slowly for half an hour to an hour.
Before serving, add salt and other seasonings to taste. I only add salt to the soup, as I prefer the original flavor of the ingredients.
