Detailed Steps for Cooking Braised Eggplant with Tofu
Finely chop spring onion, ginger, and garlic. Cut chili peppers into diamond shapes. Slice tofu and pork belly. Cut eggplant into thick slices. Mix cooking wine and dark soy sauce together. Mix salt, oyster sauce, sugar, ground pepper, chicken bouillon, and water together. Mix cornstarch with water (1:3 ratio) separately.
Fry eggplant and tofu for 1 minute each, then remove and drain excess oil.
Heat oil in a pan, add star anise and pork belly, stir-fry on low heat for 2 minutes and 30 seconds to render the fat. Then add spring onion, ginger, garlic, cooking wine, and dark soy sauce, stir-fry for 30 seconds.
On medium heat, add tofu and eggplant, pour in the prepared seasoning mixture, cover and braise for 5 minutes.
Add chili peppers and water-cornstarch mixture, stir-fry for 1 minute.
