Detailed Steps for Braised Lotus Root
Prepare your favorite ingredients, and boil the eggs in advance.
Marinate the meat with dark soy sauce for color, stir-fry bay leaf, cinnamon, ginger slices, garlic, and bay leaf for flavor. If you like it spicy, add dried chili at this step. I don’t like spicy food, and neither do my children, so I skipped this. You can also use dark soy sauce for coloring, but I recommend dark soy sauce for beginners.
Add water, try to add enough at once, then add lotus root, eggs, and tofu skin. Bring to a boil, around 40 minutes.
After 40 minutes, when it’s cooked, add edamame and continue to cook for about 8 minutes. Turn off the heat and let it soak overnight.
The next morning, I left for work early, and when I came back home in the evening, this is what my children had prepared for me, the finished product.
