Detailed Steps for Cooking Braised Pig’s Trotters
Add water to a pot, pour in yellow wine
Add cleaned pig’s trotters, boil over high heat for 3 minutes to remove blood
Remove the trotters from the water and drain
Evenly coat the trotters with dark soy sauce (this will give a better color to the braised trotters), use 1 tablespoon of dark soy sauce here
Flatten the ginger with a knife
Coat the trotters with dark soy sauce and place them in the inner pot of an electric pressure cooker
Add oil to the pot, add spices, ginger, and Sichuan peppercorns, stir-fry over low heat until fragrant
Add water
Add rock sugar
Add the remaining dark soy sauce
Add soy sauce, bring to a boil over high heat
Pour the cooked sauce into the inner pot of the electric pressure cooker
Place it in the pressure cooker, select the tendon button, press start. Once cooked, remove and it’s ready to eat
