Steps to Cook Braised Pig Tail
After blanching the pig tail, sauté it in a wok until caramelized. Add star anise, Sichuan peppercorn, dried chili, cooking wine, ginger, garlic, a little red braising soy sauce, stir-fry evenly, add a little water, and stir-fry for another minute or two.
Transfer the pig tail to a clay pot, add enough water (just enough to cover the pig tail). Bring to a boil over high heat, then simmer over low heat until there is only a small amount of broth left. Add salt to taste and stir-fry.
Reduce the sauce over high heat, then serve on a plate.
