Detailed Steps for Braised Pig Trotters with Soybeans
Cut the pig trotters into pieces, wash the soybeans, put them together in a pressure cooker, add water about 1/4 of the pot;
Cook on the porridge setting for 20 minutes, then add 5 more minutes, totaling 25 minutes, release the pressure after time is up, and drain the food;
Heat the pot over medium heat, add cooking oil, star anise, and 2 tbsp of brown sugar, cook until the sugar melts and turns slightly dark, do not burn it too much as it will become bitter;
Immediately add the pig trotters, stir-fry to color them;
Add the soybeans, stir-fry briefly, pour in about 1 bowl of water, not too much water as the pig trotters are already cooked, add 1 tbsp of Lee Kum Kee oyster sauce, 3 tbsp of light soy sauce or adjust as needed, 1/2 tbsp of dark soy sauce, 1/3 tsp of ground pepper, 1 tbsp of cooking wine, 1 tbsp of honey, simmer over medium heat, stirring the pig trotters occasionally;
