Prepare the ingredients.
Clean the pomfret and make a few diagonal cuts on both sides. Fry in a pan with 60% hot oil.
Fry until both sides are golden brown, then remove the fish from the pan and discard the oil to remove any fishy smell.
Heat up some oil in a clean pan, add star anise and scallion ginger and stir-fry until fragrant. Add cooking wine and soy sauce, salt and sugar, and pour in a small amount of hot water. Bring to a boil.
Add the fried fish and simmer over low heat for a few minutes.
