Braised Pork Chop with Egg and Onion Sauce Detailed Cooking Steps
Clean and bone the pork chop.
Break the tendons along the edge and the white part near the edge, or cut them with scissors.
Tenderize the pork chop. The volume of the pork chop will increase by 1.5 times after tenderizing.
Sprinkle black pepper salt. Marinate for five minutes.
While marinating the pork, prepare the sauce. Cut half an onion and put it in a small pot.
Add broth, mirin, soy sauce, and cooking wine/sake in a ratio of 4:1:1:1. If there is no broth, use the same amount of water and a teaspoon of chicken powder instead.
Simmer and set aside. You can add some salt to taste. I didn’t add any because the soy sauce was salty enough.
Sprinkle flour.
Coat the pork chop evenly with flour on both sides.
Coat the pork chop with egg wash (two eggs) and then with bread crumbs.
Coat the pork chop with flour, egg wash, and bread crumbs in sequence for three times, and then fry it in a pan.
Fry until the bottom is golden brown, then flip it over, about 2-3 minutes.
Place the fried pork chop on absorbent paper.
Pour out the remaining oil in the pan, add the sauce prepared in step 7, and bring to a boil.
Cut the pork chop into small pieces and put them back in the pan.
In the remaining egg wash from step 9, add two more eggs and stir until the egg yolk and egg white can be separated.
Pour all the egg wash into the pan.
Sprinkle with scallions, switch to medium heat, and wait until the sauce is completely absorbed by the pork and egg wash before turning off the heat.
The egg should be about 90% cooked at this point, with a little bit of liquid left. If you mind, cover the pan (keep the heat off) and let it sit for three minutes to fully cook the eggs.
