Detailed Steps for Braised Pork Ribs with Chestnuts
Before cooking, soak the shiitake mushrooms and peel the chestnuts. Then follow the steps below. Heat the iron pan and add oil. Fry the chestnuts until fragrant (slightly yellow on the surface) and set aside.
Using the same pan, stir-fry the shiitake mushrooms until fragrant. If there is too much oil in the pan, remove some, otherwise the dish will be too greasy!
Do not remove the shiitake mushrooms, directly add the pork ribs and stir-fry until the water is dried up. Then add two pieces of rock sugar and stir-fry until melted.
After the rock sugar is melted, add soy sauce and stir-fry evenly.
Add enough water to cover the pork ribs by one finger height, and bring to a boil over high heat.
Add star anise, salt, cover the pot, and simmer over low heat for 20 minutes.
After 20 minutes, add the chestnuts and simmer for another 10 minutes. Finally, turn up the heat and stir-fry until the sauce is evenly coated.
