Braised Pork Ribs Detailed Cooking Steps
Soak the pork ribs in water to remove blood, then put them in cold water with scallion, ginger, and cooking wine to remove the fishy smell. After boiling, skim off the foam, then wash the ribs with clean water and set aside.
Prepare cinnamon, star anise, dried chili pepper, and rock sugar.
Heat a small amount of oil in a pot, then add rock sugar and stir-fry until it turns brown. Then turn to low heat.
Add the pork ribs and stir-fry evenly.
Add the auxiliary ingredients and continue to stir-fry until fragrant.
Add cooking wine.
Add a little light soy sauce for seasoning, and add dark soy sauce according to the desired color. I was satisfied with the color of the sugar I fried, so I didn’t add dark soy sauce this time.
