Main Ingredients:
400g pork with skin.

Oil: as needed; Salt: as needed; Chicken bouillon: a little; Light soy sauce: half a bottle; Brown sugar: 40g; Caramel color: 1 bowl; Spices for braising: as shown in picture 2.

Steps to Cook Braised Pork
Clean the purchased pork and blanch in boiling water.
Sauté the spices until fragrant, add light soy sauce, salt, caramel color, brown sugar, red yeast rice, chicken bouillon, scallion knots, and oil, bring to a boil, and simmer for a while.
Add the pork and simmer over low heat for about half an hour.
Clean the pot, add 20g white sugar, 20g brown sugar, place the steaming rack and braised pork, cover, and cook until white smoke appears in the pot, about 3 minutes.
The braised pork will have a brighter color and a more flavorful taste after cooking.
