Trim the shiitake mushrooms and cut them into slices. Put an appropriate amount of water in the pot and bring it to a boil. Add the shiitake mushroom slices and blanch them until they are cooked but still firm.
Remove the mushrooms from the pot and put them in cold water to cool them down. Squeeze out the excess water and set aside.
