Detailed Steps for Cooking Breaded Fried Cake
Dissolve yeast in warm water, then mix with high-gluten flour, egg, milk powder, salt, and sugar. Knead into a smooth dough.
Add softened butter and knead until the dough expands.
Cover with plastic wrap and a damp cloth, and let it ferment in a warm place for about an hour.
Ferment until it is 2.5 times larger. Dust your hands with flour and test the dough to make sure it does not shrink back.
Knead the fermented dough again to release the air bubbles inside. You will hear a popping sound. Divide the dough into 8 portions, cover with plastic wrap, and continue to ferment for 25-30 minutes. The dough will continue to expand.
Divide the mung bean paste into 8 portions.
Flatten the fermented dough and place the mung bean paste (or other filling) on top.
Wrap the mung bean paste and form it into a ball, then press it flat with your hand.
Brush the surface with egg liquid, then coat with bread crumbs. Place it in a warm place to ferment for another hour or so. The volume will continue to increase.
Heat the oil and fry the fermented dough over medium heat for about 1 minute.
