Detailed steps for making Butterfly Pea Flower Starry European Bread
Prepare the ingredients. (Chop the walnuts and cranberries in advance.)
Soak the butterfly pea flower in boiling water for 5 minutes.
Put 160g of the soaking water from the butterfly pea flower into the bread machine.
Add the flour, whole wheat flour, and sugar (excluding butter, salt, and yeast) into the bread machine. Choose an ice cream dough program for 20 minutes. After the program is finished, cover the dough with a damp cloth and let it rest for about 30-1 hour.
After the dough has rested, add the softened butter and salt into the bread machine and choose another dough program.
Knead the dough for 10 minutes, then add the yeast and continue kneading.
Add the mixed dried fruit in the last three minutes of kneading, and knead until the program ends.
Take out the kneaded dough and shape it into a round shape by folding it, with the seam facing up.
Put the dough in a proofing basket that has been dusted with flour. Put a bowl of hot water in the oven, with humidity at around 75% and temperature between 35-38 degrees Celsius. Put the proofing basket in the oven and let it proof for about 40 minutes.
When the dough has doubled in size, take it out and preheat the oven to 200 degrees Celsius (top heat) and 160 degrees Celsius (bottom heat) for 10 minutes.
Place the dough upside down on an oiled baking sheet and cut it into your desired shape.
Place the bread dough on the middle rack of the oven, spray water inside the oven (not on the bread), and bake at 190 degrees Celsius (top heat) and 160 degrees Celsius (bottom heat) for 30 minutes. Cover the bread with aluminum foil if it is browning too quickly.
Take out the baked bread and let it cool on a wire rack before serving. If not consumed immediately, store in a plastic bag at room temperature.
