Steps for Cooking Carp and Crab Mushroom Soup
Clean the carp and make a few cuts on the back of the fish.
Wash the crab mushrooms and prepare them.
Prepare the scallion, ginger, and cooking wine.
Marinate the fish with cooking wine, scallion, and ginger for ten minutes.
Remove the scallion and ginger, and sprinkle salt on the surface of the fish for ten minutes.
Heat the pan with appropriate amount of olive oil, and fry the fish over low heat.
Flip the fish over after it is cooked.
Fry two poached eggs and set aside.
Boil water in a clay pot.
Add the fried fish to the pot.
Add the poached eggs and simmer for ten minutes over low heat.
Add the crab mushrooms and simmer for 15 minutes.
