Detailed Steps for Making Carrot Coconut Toast
Peel and grate the carrots to measure 100g, mix all the flour ingredients evenly, and soften the unsalted butter at room temperature for later use.
Add the shredded carrots to the flour mixture, knead evenly by hand; then add the light cream, unsalted butter, and finally add the milk (do not pour all at once, leave about 15ml, add more as needed based on the dough’s stickiness, if the dough becomes too wet, add more high-gluten flour and knead evenly). Mix and knead into a dough with a smooth surface and elasticity, then fold the edges down. Due to the hot weather, cover with plastic wrap and let it ferment for basic fermentation (about 1 hour) until the dough doubles in size. If operating in lower temperatures, you can place the mixing bowl covered with plastic wrap in a pot of warm water (water should be warm to the touch), cover the pot, and let it ferment.
Sprinkle some high-gluten flour on the kneading board, place the dough on it, gently press to release the gas, cover with a clean damp cloth, and let it rest for 15 minutes.
After resting, divide the dough into 8 equal parts, if your oven is small, bake separately. If not baking immediately, store in the refrigerator. Roll out the dough with a rolling pin into a long strip, sprinkle with coconut shreds, roll it up, grease the mold with butter for easy removal, place the dough in the mold for the second fermentation.
The second fermentation is similar to the basic fermentation mentioned earlier, lasting for 1 hour, preheat the oven to 180°C for 10 minutes during this time. Spray water on the surface of the dough, sprinkle with coconut shreds, then place it in the oven and bake at 180°C for 35 to 40 minutes.
