Wash the celery leaves and put them in a juicer.
Filter out the foam from the juice.
Separate egg whites and yolks into separate containers.
Combine egg yolks with sugar and oil, mix well, add celery juice and mix to form a smooth juice mixture.
Smooth and well-mixed juice mixture.
Whip egg whites with sugar until stiff peaks form, then fold a portion into the celery juice mixture.
Fold gently using a silicone spatula, do not overmix to avoid deflating the mixture. Preheat the oven.
