Detailed Steps for Cooking Century Egg and Lean Pork Congee
Cut the lean pork into small pieces.
Marinate the pork slices with a little salt, soy sauce, cornstarch, water, and sesame oil, and let it sit for about 20 minutes.
Clean and slice the shiitake mushrooms.
Stir-fry the marinated meat slices in a non-stick pan until they change color. You can also cook them directly in the boiling porridge.
Cut the century egg into small pieces.
Julienne the ginger. I like to add some ginger for flavor when cooking congee, it enhances the taste.
Cook a pot of white rice porridge in a rice cooker the night before. In the morning, transfer it to a cast iron pot.
Add shiitake mushrooms, century egg, and ginger strips, and bring to a boil.
Add the stir-fried meat slices. Season with a little salt.
Sprinkle with chopped green onions before serving. It’s optional, but I like to add it for flavor and presentation.
