Detailed Steps for Making Char Siu Nut Mooncake
To make char siu mooncake, I specially roasted the char siu. It’s very delicious.
Weigh the ingredients.
Prepare the nuts: walnuts, peanuts, almonds, sunflower seeds, sesame seeds, all 100g each, except almonds which need to be roasted. Also prepare the dried fruits.
Pour all filling ingredients into a bowl, except oil and water.
Mix well.
Add oil and mix well, then add a suitable amount of cold water. Adjust the amount of cold water according to the filling.
Mix until it forms a cohesive filling, then let it sit for an hour.
Divide the filling into balls of 70-80g each.
Pour invert syrup, oil, and alum water into a small bowl. Mix thoroughly until fully combined.
Add flour and milk powder.
Knead into a dough and let it rest for an hour.
Divide the dough into 20g portions.
Flatten the dough and wrap it around the filling, sealing tightly.
Dust the mold with cake flour and place the mooncake in it to shape.
Place all finished mooncakes on a baking tray, spray with water before baking.
Preheat the oven to 190 degrees, bake for 5 minutes, then brush with egg wash and continue baking for 15 minutes.
Let the baked mooncakes cool, wrap them up, and wait for the oil to return. With this recipe, they usually return oil in about 1 day.
