Cheesecake Cooking Steps
Prepare all ingredients (butter is missing in the photos, forgot to include). Make sure the butter is softened in advance.
Melt the cream cheese in a double boiler, add a small amount of milk to mix well, then add the butter and mix thoroughly.
Sift the cake flour and cornstarch, then add to the cream cheese mixture. Stir again, making sure to mix in an up-and-down motion rather than stirring in circles to avoid a dense cake texture.
Add the three egg yolks to the batter, one at a time, and mix well. Add a few drops of rum for flavor.
Beat the egg whites until stiff peaks form. Gradually add the egg whites to the batter in three parts, then line the baking pan with parchment paper, pour in the batter, and bake in a water bath at 160 degrees Celsius for over 1 hour (for an 8-inch pan). I forgot to take a photo of this step, will do so next time.
I baked mine for 60 minutes.
It turned out slightly dry. The appearance is still good.
The taste and texture are quite good.
The next morning, slice a few pieces, serve with fruits and a beverage for a nutritious and convenient breakfast.
