Steps to Cook Chestnut Braised Frog

Cut the frog into pieces, marinate with 1/2 teaspoon salt, 1/2 tablespoon cooking oil, 1/2 teaspoon black pepper, and 2 teaspoons cornstarch, mix well by hand, marinate for 10 minutes.
Boil the chestnuts in water for 10-20 minutes, then remove and soak in cold water, slice the green and red chili peppers, slice the ginger.
Heat oil in a pan until 80% hot, add the frog pieces and fry over high heat. Do not flip immediately, shake the pan until the frog pieces can separate, then use chopsticks to separate.
Fry the chestnuts in the pan until slightly crispy, then remove. Set aside the fried frog and chestnuts.
Discard the oil used to fry the frog, the remaining oil in the pan is enough. Sauté the green onion, ginger, and garlic until fragrant.
Add light soy sauce, dark soy sauce, cooking wine, rock sugar, and 1 bowl of broth. Bring to a boil.
Pour in the frog and chestnuts. Bring to a boil over high heat, then simmer over low heat for 5 minutes.
Season with 1/2 teaspoon salt, cook over high heat to reduce the sauce.
Before the sauce completely reduces, add the green and red chili peppers, stir-fry over high heat until cooked through.
