Cut boneless chicken thighs into cubes and blanch. Slice mushrooms, chop carrots and green bell pepper. Julienne the ginger.
Heat oil in a pan, sauté the mushrooms, set aside. Add chicken thighs and ginger, stir-fry evenly.
Add carrot slices, stir-fry together, then add soy sauce, sweet and spicy sauce, salt, stir-fry over high heat.
Add green bell pepper, stir until just cooked.
