Steps to Cook Chicken with Shrimp
Prepare the ingredients.
Peel and devein the shrimp, and cut into small pieces.
Rinse the shrimp in a bowl and use kitchen paper to remove excess water. Add salt, sugar, cooking wine, and pepper, and mix well until sticky.
Cut the chicken breast into small pieces and marinate it in the same way as the shrimp, but use wet cornstarch instead because chicken absorbs water while shrimp does not.
Chop the scallion, ginger, and garlic, and put them in a small bowl. Add salt, sugar, pepper, vinegar, starch, and water, and mix well. This is the sauce.
Heat the wok, add oil, and heat it until slightly warm. Add the chicken and stir-fry over high heat until the chicken just changes color, then remove it from the wok.
Add the shrimp to the wok and stir-fry over high heat until the shrimp turns slightly red. Then add the marinated red pepper and blanched edamame, and stir-fry for two more scoops.
Pour the chicken back into the wok and stir-fry quickly until everything is mixed well.
Pour in the sauce, stir-fry quickly until the sauce boils, and then remove from the heat and serve.
