Steps to Make Chocolate Bread with Fermented Dough
Put the ingredients for the fermented dough (250g high-gluten flour, 8g sugar, 1.5g instant yeast, 70g fresh milk, 70g whipping cream, 1 egg white, and 10g butter) into the bread maker. Add the liquid ingredients first, including milk, cream, egg white, sugar, and butter. Then add the high-gluten flour. Dig a small hole in the flour and put in the yeast. Start the bread maker and knead the dough for 15 minutes.
The kneaded dough is the fermented dough. Wrap it in plastic wrap and refrigerate it overnight. This can save time and improve the flavor of the bread. (Or let it ferment at room temperature until it doubles in size.)
The fermented dough does not need to be deflated. Tear it into small pieces and put it into the bread maker.
Put the ingredients for the main dough (1 whole egg, 35g granulated sugar, 3g salt, 1g instant yeast, and 10g butter) into the bread maker. (Salt and yeast should be added separately and not mixed together. Salt will inhibit the fermentation of yeast.)
Knead the dough for 15 minutes. Check the state of the dough. If it can be stretched into a thin film with irregular holes, add softened butter and knead the dough for another 15 minutes. Pull the dough apart to get a large, firm film.
Let the bread maker ferment the dough for 1 hour.
Deflate the dough, divide it into 6 equal parts, and cut out a small piece for the ears.
Fill with chocolate sauce.
Place the ears on top and put the sealed side down on the baking sheet. Put it in the oven at 50 degrees Celsius for 15 minutes to ferment. (The ears do not need to be attached. They will naturally stick together during the baking process.)
Brush the remaining egg yolk on the bread and cut the cheese slices into circles for the dragon cat’s belly.
Preheat the oven to 190 degrees Celsius, with upper and lower heat, and bake for about 15 minutes.
