Detailed Steps for Making Chocolate Flavored Old-Fashioned Cake
Separate egg whites and yolks, then put corn oil in a milk pot.
Heat gently to around 40 degrees, with a slight steam coming off.
Sift low-gluten flour and cocoa powder, then add to the oil and mix slightly.
Add milk, mix well, then add egg yolks, mix well, and set aside.
Whip egg whites, add one-third of the sugar, beat until stiff peaks form, then add another one-third of the sugar and continue beating.
Continue beating.
Add the remaining sugar, beat until glossy and forms soft peaks, then lift the beater and there should be small peaks on top.
Take one-third of the egg whites and fold into the cocoa mixture using a Z-shaped motion.
After mixing well, pour back into the bowl with the egg whites, fold gently using an up-and-down motion, avoiding circular motions to prevent deflating.
The cake batter should look like this after mixing.
Line an 8-inch baking pan with parchment paper, pour the cake batter in, sprinkle with chocolate chips, place the 8-inch pan in a larger pan with 3 cm of water, use a water bath method, then place in a preheated oven at 150 degrees for 50 minutes.
