Detailed Steps for Making Christmas Tree Cake Roll
Draw a simple Christmas tree sketch with a pen and set aside.
Separate egg whites and yolks.
Add sugar to egg whites in three portions and beat until stiff peaks form. (Place the bottom of the egg white bowl in a bowl of hot water at 70 degrees to help with beating). The egg whites should form stiff peaks when the beater is lifted (if using an electric mixer, start at low speed for one minute, then switch to high speed for 6 minutes, and finally back to low speed for one minute).
Add milk and oil to egg yolks, stir until no oil streaks remain, then sift in flour.
Stir until no dry flour remains (or use a mixer for a few seconds).
Take 1/3 of the egg white mixture and fold it into the egg yolk batter, folding gently or using a cutting motion (do not stir in circles to avoid deflating the mixture).
Then pour the mixed batter back into the remaining egg white mixture, fold gently or using a cutting motion (again, avoid stirring in circles).
Fold gently until well combined.
The cake batter is ready.
Spoon the batter into different bowls and add different food coloring to create different colored batters.
Transfer each colored batter into piping bags and pipe out the Christmas tree shape (place the pre-drawn Christmas tree under parchment paper and place both in the baking pan).
Pour the remaining plain batter over the baked Christmas tree batter, smoothing it out.
Place the baking pan back in the oven, middle rack, at 180 degrees, and bake for 25 minutes until done. Let it cool.
Whip 50g of whipping cream with sugar in the refrigerator.
This is the whipped cream in good consistency.
On the cooled cake, make a few cuts (do not cut through), spread the whipped cream, and add mango cubes.
Using the bottom parchment paper, roll up the cake, place the rolled cake in the refrigerator to set (about an hour).
Remove the parchment paper, and the beautiful Christmas tree cake roll is ready.
