Wash the fresh figs, peel and remove stems, then drain and set aside.
Figs are naturally high in sugar, so adjust the amount of rock sugar according to personal preference. Squeeze lemon juice and cut figs into chunks.
Add crushed figs to rock sugar and lemon juice, mix well, then let it sit for 2 hours for pectin to form.
Heat the fruit mixture in a pot, stirring constantly to prevent sticking and skimming off any foam that forms on the surface. After about 20 minutes, the jam will start to thicken. At this point, you can add your favorite spices like cinnamon powder or vanilla. Continue heating for another 10 minutes until the jam sets.
Pour the jam into sterilized glass jars, let it cool naturally, then refrigerate.
