Steps to Make Clay Pot Roasted Sweet Potatoes
Wash the sweet potatoes and dry them with kitchen paper (make sure they are of the same size for even roasting).
Wipe the new clay pot with a dry, clean cloth and let it dry in a dry, ventilated place (the mouth of the pot should also be ventilated).
Place small stones (about 1cm in size) at the bottom of the clay pot.
Place aluminum foil on the stones, close to the pot wall, and extend the aluminum foil outside the pot so that water or sugar will not drip into the pot (the excess part on the top should wrap around the edge of the pot).
Place the sweet potatoes evenly in the pot.
Cover the pot and roast over medium heat for about 40 minutes, turning the sweet potatoes over every 15 minutes.
After turning off the heat, do not open the lid and continue to use the residual heat of the clay pot to steam for another 10 minutes. If a chopstick can be inserted into the sweet potatoes, they are cooked.
Clay Pot Roasted Sweet Potatoes are delicious and sweet! They are faster than the oven and not as dry as those roasted in the microwave. They have a moderate amount of moisture and some may even release “sugar oil”.
